If I were to knit myself a wedding shawl/scarf/stole, what would I knit? I am especially interested in the history of the tradition, and possibly patterns...

I haven't been able to afford any of the really good resources on Estonian lace knitting/Orenburg shawls/Shetland lace, which are the three big "wedding ring shawl" traditions. (Damn Europe and its love for non-knitted lace.) However, when it comes to knitting in the round: I really like this collection of round shawls, which I've knitted 1.5 of. They start off from a small tab, then blossom outwards until the outer border. I knit them in the round using a long circular needle. Might be an avenue to consider.

Oh, [personal profile] staranise has a clever suggestion with the knitting a circular shawl on circs! That might trick your brain. ;)

I have no suggestions for specific patterns, though I do have some lovely circular shawls in my rav queue (one of which is shown used for bridal gear).
