Assuming it still exists (I was there, um, summer of 2003) there is a really, really yummily awesome restaurant in downtown SB that serves New Mexican food (it's Mexican food with Native American influence) and it was super, duper yummy. I remember it being smallish, with indoor and outdoor tables and possibly architecture made to look a bit like a pueblo. Which may or may not be remotely useful...

(Also the owner/cook totally came out, sat down at our table, and answered our questions on how to make some of the food. Can't get better than that.)
